In Pursuit of the Perfect Plate….
As a child, my mother insisted that every meal was well balanced, her background in dietary nutrition would allow nothing less. There was always a well-balanced plate at dinner, a protein, a vegetable, a carb… well…. a starch… as it was referred to in the eighties. I don’t think she understood that she was creating such sophisticated palates for her family – I recall visiting the homes of my friends and having ‘just’ macaroni and cheese for dinner – I thought, what the heck is going on around here? Where’s the chicken… the “string beans”…? Of course, there was also “the great rice a roni discovery” at a friend’s house – something my mother would never buy – shamefully, to this day it is one of my favorite sides. I digress….
As an adult, I find myself routinely in pursuit of the “perfect plate”. On a recent visit to Dallas, I found such a beast! Chef Dean Fearing of Fearings at the Ritz Carlton in Dallas, Texas put together such an amazing menu it was hard to decide which plate to try. I narrowed it down to this one –
Yoakum Akaushi Beef Filet and Chicken Fried Maine Lobster on ‘Loaded’ Whipped Potatoes and Soft Spinach Taco with Smoked Tomato Gravy. Seriously Chef? Ahhhhmazing! Kudos to Chef Dean Fearing for creating such a perfect plate! And thank you Pat M! for picking the perfect place!
