Chef Brian’s Yummy Springtime Salad

Yesterday, I had family over for Easter dinner.  Everything was delicious, the children enjoyed an Easter Egg Hunt while the adults enjoyed good conversation and great food.

On the potluck menu was succulent barbecued country ribs, bacon wrapped italian meatballs, macaroni and cheese, my father’s southern style collard greens, warm asparagus salad, sliced brown sugar and pineapple glazed ham, fried chicken, Peruvian chicken, Peruvian style rice, Italian style meatballs with fresh garlic and a yummy sauce, deviled eggs, delicious egg salad stuffed puff pastry, potato salad, cornbread and rolls along with an array of desserts.

What stood out the most for me with yesterday’s menu was Chef Brian’s warm asparagus and brussels sprout salad with walnuts and cranberries.  The salad was drizzled with a warm honey and olive oil dressing.  It screamed “SPRING IS HERE!” – the salad was delicious and a great, bright addition to our very rich and savory menu.
