So, if you’ve lived on Planet Earth and have landed on any foodie blog in the past 12-24 months, you’ve heard of overnight oats. If not… allow me to enlighten you. I’ve been investigating this foodie phenom for the better part of a year now. In a nutshell, its essentially a powerhouse trio of oats, chia seeds (more about this superfood) and Greek yogurt made ahead for an energy boosting breakfast in the am. Honestly, I wondered, what’s the big deal? Then, I thought… well… I certainly haven’t seen a more appealing version of oatmeal –how bad can it be? I mean, just look at those jars….. So… I finally pulled out a few mason jars and created a few concoctions of my own.
I decided to test a few, one pretty traditional, one that I’m sure to love because let’s face it… what’s not to like about fruit and cream and finally one that’s a bit more adventurous – Pina Colada -I mean, I had pineapples and coconut anyways so… I went for it!
The oats can be served warm or cold. Although the weather is absolutely gorgeous by afternoon, the mornings are still a bit cold here so … at least one version of these oats will take a quick spin in the mic!
Microphone checka, one two, checka… oh yessa…. I digress….
The base for the oatmeal is the same (layered in this order):
- 1/3 cup of whole oats (not the quick cook kind, we’re trying to be healthy here)
- 1 tbsp. Chia Seeds (I’m feeling healthier already)
- 1/4 cup of your favorite milk (almond, soy, dairy… you get the point)
- 1/4 cup of Greek yogurt (or substitute by using more milk)
Then it gets interesting… you can literally be as creative as you’d like here!
Apples & Cinnamon
- 1/4 cup diced Granny Smith Apples
- ½ tsp vanilla
- ¼ tsp cinnamon
- 1 tbsp. raisins
- 1 tbsp. honey drizzled over the top
Strawberries & Cream
- ¼ cup diced strawberries
- 1 tbsp. strawberry all fruit or jam
- ½ tsp vanilla
- ¼ tsp cinnamon
Pina Colada
- ¼ cup crushed pineapples
- ¼ tsp vanilla extract
- 1 tbsp shredded coconut
Good Morning…. I gave it a good hearty stirring at my desk and Wow! The oatmeal was delicious! No – seriously…. I am literally looking forward to morning to try another… hmmm… bananas and pecans maybe? Anywho… the strawberries and cream version is my favorite so far. Very filling and satisfying – I wasn’t hungry until far beyond my usual lunch time. You should definitely give this a try!
