I have been craving ceviche lately and yes… I have been heading over to my favorite places to have it, but come on… really… why can’t I make this simple recipe at home just as deliciously?
Hmmm… Perhaps I can? Today I headed over to Balducci’s in Old Town Alexandria… one of my new favorite places and found some of the freshest Chilean Sea Bass and Shrimp. Score!!! Ceviche tonight! While there, I also picked up some of my favorite things…. candied pecans, a delectable aged gouda and thanks to the cheese guru there, an incredible blue cheese…. more on that later.
My ceviche included fresh shrimp (poached ever so quickly, i know, i know… raw is best)
Super Fresh Chilean Sea Bass
Fresh cilantro
Fresh Jalapeno
The juice of three limes
A bit of finely diced onion and a dash of olive oil
Diced everything up and added a generous amount of Kosher salt. See how the sea bass has already started to “cook” in the lime juice, and the bits of lime? Yum! Now… while that’s chilling in the fridge, I am sooooo frying up some tortilla chips to go with this.
I’m surely going to try this dish. It looks and sounds very tasty. Have been trying to experiment with new tastes lately and this is a go! Thanks for sharing!
