So my basil has been growing so beautifully…. today as I sat in traffic driving home, I found my happy place and thought about what to do in my kitchen with all of that beautiful basil.
I always have seafood in my freezer… it thaws in minutes under cold water. Hmmm….I could literally pull together something great in 30 or 40 minutes including thawing time. I decided to make a very simple tomato and onion salad with fresh basil to top some gorgeously fried flounder fillets. The outcome… just dreamy.
Side note… I prefer to use coconut oil or vegetable shortening here so that my house doesn’t reek of fried fish all night.
Oh yeah… I served it with super sweet corn …
……and some corn fritters I threw together pretty quickly. Technically, I can call the fritters vegetables since they were filled with corn and onions, right? Not so much…?
The Salad…
12-15 small variety tomatoes (small heirloom, grape, cherry – whatever)
1/2 Vidalia Onion sliced thinly (mine were sliced as thin as I could manage after working a long day)
Splash of Aged Balsamic Vinegar
Splash of Olive Oil
Generous amount of Salt and Pepper to taste
Then tear in 8 or more large fresh basil leaves

Thanks for the suggestion regarding how to prevent a fishy odor in the kitchen after frying fish. I know from first hand experience that the fish was great, however, I missed the salad. Thanks for sharing the delicious sounding recipe.
