Easy Pico de Gallo (chunky salsa)

I’ve been growing herbs all summer and I’m loving them!  Well…. after moving most of them outside… the basil however continues to do just perfectly indoors, the others are now outside thriving.

After many years of learning to speak Spanish -my sister introduced me to much of the culture. One of highlights she introduced to my family when I was a teen was Salsa and I’ve been obsessed with it ever since.

Last weekend I had my Godson (her grandson) in the kitchen with me.  We made her some killer Pico de Gallo.

We started with some fresh cilantro, diced some beautiful tomatoes – which I vow to grow next summer…. and a generous amount of chopped onions (rinsed in water to temper that rawness a bit).

We then squeezed in some very vibrant lime juice…  which took a lot of muscle!  But was well worth it!

We added a generous sprinkling of salt and VOILA!  Killer Pico de Gallo!

This was a super simple recipe and I hope you’ll try it.

My Killer Pico

3 cups of diced tomatoes

1 cup of chopped cilantro

1 cup of chopped onions 

about 1/2 cup of freshly squeezed lime juice

Generous amount of salt to taste
